Food Waste Friday, the Kale Edition

Yay! No food waste this week. I had some close calls with some green onions, but peeling off the wilty outer layers did the trick.
When I exploded my juicer a few weeks back, I had a bunch of kale to eat instead of juice. So I made soup. And then I made sauteed kale. CM actually liked it enough to go back for seconds!
- butter or oil 1-2 tbsp
- 1/2 – 1 onion depending on size, diced
- 1-4 cloves garlic, peeled and diced
- 1 bunch kale sliced, stems trimmed and set aside from the leaves
- 1-2 cups vegetable or chicken stock
Throw the fat, onion, and garlic in a pan. Saute for a minute and then throw in the kale stems. Cook until starting to get tender. Then throw in the kale leaves and a couple cups of vegetable broth, cover with an ajar lid to steam. Cook until desired tenderness is achieved.
I’ve tried several different variations on this including using rice wine vinegar and soy sauce, or really whatever I have that needs to be used up. I generally taste as I go and for better or worse improvise. My sister made kale chips a while ago, so I’ll have to get the recipe for those and try that the next time I need to use some kale up.
